Toolchain and dependency updates
Builds move to Go 1.27.3 on Debian trixie, with the latest PDF and spreadsheet library fixes. The spreadsheet library is pinned to the commit that fixes its denial-of-service bugs.

Containers, Dokploy and encryption at rest
Mithra can now run as two containers: the app and a sandboxed PDF parser with no network. The container image encrypts the whole database with SQLCipher, backups can be taken while the app runs, and a new guide covers deploying on Dokploy. The systemd install is unchanged.

Security fixes and sample trends
Closed the open CodeQL alerts, fixed demo reset file ownership in the installer, and added sample health trends to the demo household.

Choose your AI provider
The household owner can now connect a model provider of their choice in Settings. The key is encrypted, never shown again, and never reused across providers. Without one, every record you enter still works.
